SHRIMP AND BRIE LINGUINE

Ingredients

8 ounces Brie – rind removed – cubed
¼ cup sun-dried tomatoes in oil – coarsely chopped
2 tomatoes – seeded and chopped
1/3 cup pitted Kalamata olives – chopped
2 garlic cloves – minced
1 cup chopped fresh basil
½ tsp pepper
¼ cup virgin olive oil

1. Mix all above together in a bowl and keep 1 hour

2. Cook 8 oz linguine in salted water – approximately 2 minutes BEFORE done add ½ pound (or up to 1 pound) of shrimp

3. Cook 2 minutes till shrimp are done

4. Drain pasta and shrimp immediately – add Brie mixture - toss

5. Serve immediately with fresh Parmesan
